Fathead pizza dough is a classic of ketogenic cuisine. Made from mozzarella, almond powder and eggs, it is very easy to make and above all quite versatile as it can also be used as a dough for treats or slippers.
The base is made up of 8 parts, each part contains 120 Kcal: 1,6 gr of carbohydrates, 9 of lipids and 10 gr of proteins.
For the base:
300 gr grated firm mozzarella cheese (for the dough)
2 tablespoons almond powder
1 teaspoon herb and spice mixture for pizza
For the trim:
4 tbsp. Tomato sauce with no added sugar
Pizza topping of your choice (here pepperoni and pan-fried fresh mushrooms.
Put the grated mozzarella cheese in a microwave-safe bowl and cook on high for 1 minute.
Pizza Fathead - Step 1Take out of the microwave, mix well, then return to maximum power for 30 seconds.
Remove the bowl from the microwave, mix well, add the egg, almond powder and spices and work the dough by hand or spoon until it is well blended.
Spread the dough by hand on a baking sheet covered with baking paper. Prick the dough well with a fork so that it does not swell.
Bake for 5-10 minutes until golden brown. Remove from oven and let cool 10 minutes before garnishing.
Pizza Fathead - After BakingFill with tomato sauce, your choice of topping and sprinkle with cheese. Broil for 5 minutes (until cheese melts). Let cool 10 minutes before serving to harden the dough.
